+I think, formmail.php is too sophisticated thing, which brings redundant complexity into this project. I could suggest you to replace it with standard mime mailer functionality, which used, for instance, for webmaster and customer e-mails sending with orders data. Standard mime mailer is easy configurable and has no any problems with encoding of sending data.
+In order to protect you from spam, something like CAPTCHA on kontakt oss form could be implemented.
